| Party Cheese-Lime Salad
2 cups of cottage cheese, creamed 3 cups of boiling water 1 teaspoon of onion, finely chopped two 3 ounce packages of lime jello 1 teaspoon of green pepper, finely chopped 1 cup of pineapple juice 1/2 cup of cucumber, coarsely chopped 1 teaspoon of vinegar 1/2 cup of celery, coarsely chopped 1/2 teaspoon of salt |

Pour boiling water on gelatin in bowl; stir until gelatin is dissolved. Stir in pineapple juice, vinegar and salt. Pour 1 cup of the gelatin mixture into 8-cup ring mold. Refrigerate until firm. Refrigerate remaining mixture until slightly thickened but not set; beat with hand beater until light and fluffy. Mix in remaining ingredients; pour on gelatin layer in mold. Refrigerate until firm. Unmold on serving plate. Yields: 10 Servings
