| Linguine with Mozzarella
8 ounces of linguine 2 tablespoons of butter 1 small onion, finely chopped 1 clove garlic, peeled and minced 2 tablespoons of flour 3/4 cup of milk 1/2 teaspoon of oregano 1/2 teaspoon of basil 2 cups of shredded mozzarella cheese 1/4 cup of Parmesan cheese 1 cup of diced prosciutto 1/4 cup of frozen peas, thawed salt and pepper to taste
Cook linguine in boiling, salted water, following package directions, drain. Melt the butter in a medium saucepan. Add onion and garlic, sauté until translucent. Add flour, stirring constantly. Gradually stir in milk; season with oregano and basil. Cook, stirring constantly, over medium heat until sauce boils. Remove saucepan from heat. Add mozzarella and Parmesan cheeses, stir until cheeses melt. Add prosciutto and peas. Return saucepan to heat and cook gently until well heated. Season with salt and pepper. Place linguine in heated serving dish. Pour sauce over linguine, mix well, and serve. Serves 4 |
