Spaghetti Gorgonzola

 

Spaghetti Gorgonzola

3 tablespoons of olive oil
1 small onion, finely chopped
1 - 2 cloves garlic, peeled and finely chopped
1 teaspoon of flour
2 cups of heavy whipping cream
1/2 cup of white wine
1 1/4 cups of gorgonzola cheese
1/4 cup of pine nuts
12 ounces of spaghetti
1/2 teaspoon of mixed Italian herbs


Heat oil in saucepan. Add onion and garlic, sauté until translucent. Stir in flour, add cream and white wine, stirring constantly. Add 1 1//4 cups of gorgonzola and pine nuts to sauce, stirring to melt cheese, simmer for 10 minutes. Cook spaghetti in boiling, salted water, following package directions, drain. Mix gorgonzola sauce and herbs with pasta. Crumble remaining gorgonzola over top and serve. Serves 4
