Mincemeat Apple Pie

one 9 ounce package of instant condensed mincemeat
1/4 cup of sugar
2 cups of thinly sliced apples
1/4 teaspoon of grated lemon peel
1 tablespoon of lemon juice
1 teaspoon of rum flavoring
pastry for 9 inch 2 crust pie
Fluffy hard sauce

 

Prepare mincemeat following package directions, except use 1/4 cup of sugar. Combine the mincemeat with apples, lemon peel, lemon juice, and rum flavoring. Line a 9 inch pie plate with pastry, pour in mincemeat mixture. Adjust top crust and crimp edges. Cut slits in top of upper crust for escape of steam. Bake at 400ºF. for 45 minutes. Serve warm with fluffy hard sauce.

Fluffy Hard sauce

2 cup of sifted confectioners' sugar
1/2 cup of butter
1 egg yolk, beaten
1 teaspoon of vanilla
1 egg white, stiffly beaten

Thoroughly cream together sifted confectioners' sugar and butter. Stir in the beaten egg yolk and 1 teaspoon of vanilla. Fold in stiffly beaten egg white. Chill.
