Butterscotch Meringue Pie

5 tablespoons of sifted flour
2/3 cup of packed light brown sugar
3 tablespoons of butter or margarine
1 1/2 cup of milk
2 eggs, separated
1 teaspoon of vanilla
1 baked pie shell
1/4 cup of sugar

Combine the flour, brown sugar and butter in top of a double broiler and mix well. Stir in the  milk and cook over boiling water until thickened, stirring constantly. Stir small amount of milk mixture into beaten egg yolks. Stir back into the milk mixture and cook for 10 minutes longer, stirring frequently. Add the vanilla and cool. Pour into the pie shell. Beat the egg whites in a bowl until stiff, adding sugar gradually. Spread over filling. Bake at 400ºF. for 8 - 10 minutes or until light brown.
