| Fudge Pie 1/4 cup of butter One 13 ounce can of evaporated milk 3 eggs, separated 1/2 cup of brown sugar, packed 1 teaspoon of vanilla 1/2 cup of chopped pecans 2 tablespoons of semisweet chocolate pieces A pinch of salt One 9 inch prepared chocolate crumb crust |

Combine the butter, evaporated milk, egg yolks and brown sugar. Cook in double boiler over boiling water, stirring constantly, until thick. Add vanilla and nuts, remove from heat. Add chocolate and stir until melted. Set aside. Beat the egg whites with salt until stiff. Fold into cooled chocolate mixture and pour into pie shell. Freeze until firm. Fudge Pie 2
1 stick oleo 2 ounces of bitter chocolate 1/4 cup of flour 1 cup of sugar 2 eggs, beaten 1/4 teaspoon of salt 1 teaspoon of vanilla 1/2 cup of chopped nuts
Melt oleo and chocolate squares (in double boiler if you have one), stir in sugar and mix well. Add the beaten eggs and salt. Mix well. Mix in 1/4 cup flour, 1 teaspoon vanilla, 1/2 cup chopped nuts. Mix well and pour into a greased pie plate. Bake at 350ºF. for 25 minutes. It will be firm on the edges and soft in the middle. Serve with ice cream and chocolate sauce if you wish.
Fudge Pie 3
2 cups of sugar 1/2 cup of cocoa 1/2 cup of flour 1 cup of margarine, melted 4 eggs, beaten 2 teaspoon of vanilla
Combine all ingredients in a mixer bowl. Beat until well mixed and pour into prepared pie shell. Bake at 375ºF. for 25 minutes or until set. Serve with whipped cream or ice cream. Fudge Pie 4
2 squares of baking chocolate 1 stick of butter 2 eggs 1 cup of sugar 1/4 cup of sifted flour (plain)
Melt chocolate and butter. Beat eggs, add sugar and flour. Mix with melted chocolate. Put in well greased 7 inch pie pan and bake 20 minutes. Serve warm topped with vanilla ice cream. |
