Lemon Lattice Pie

2 cups of sugar
1/4 cup plus 2 tablespoons of flour
6 eggs, beaten
1/2 cup of butter
1 cup of lemon juice
2 teaspoons of grated lemon peel
1 9-inch unbaked pastry shell
Lattice

Lattice ingredients:
1 cup of flour
1/2 cup of light brown sugar, packed
1 teaspoon of baking powder
1/4 teaspoon of ground nutmeg
1/4 cup of butter or margarine
1 egg, lightly beaten
1 tablespoon of milk
To make Lattice:
Mix flour, sugar, baking powder, and nutmeg in bowl; cut in butter until mixture resembles small peas. Stir in egg and milk. Knead slightly; form into ball. Chill 30 minutes. Roll dough into 11-inch circle on lightly floured surface; cut into 1/2-inch strips.

To make pie:
Mix sugar and flour in top of double boiler; beat in eggs, butter, lemon juice, and lemon peel. Cook, stirring constantly, 12 to 15 minutes or until mixture thickens. Cool. Pour into pie shell. Weave prepared Lattice into lattice design on top of custard-filled pie shell, covering all custard. Trim, seal, and flute edge. Preheat oven to 350ºF. Bake 30 to 35 minutes until golden brown. Cool on rack.
