Polar Bear Pie

1 apple, peeled, cored and finely chopped
1 egg
1/4 cup of all purpose flour
1/2 cup of sugar
1 1/2 teaspoons of baking powder
1/2 cup of ground pecans
1 quart of vanilla ice cream
1 cup of toffee pieces
Chocolate sauce  

Mix the apple, egg, flour, sugar, baking powder and pecans well by hand. Pour into an 8 inch round, well  greased cake pan. Bake at 350ºF. for 20 to 25 minutes. Cool. fill with vanilla ice cream. Top with toffee pieces. Drizzle with Chocolate Sauce or chocolate syrup.
Chocolate Sauce:
2 squares of semisweet chocolate, melted
4 tablespoons of sweetened condensed milk
1 tablespoon of crème de cacao

Combine all of the ingredients in top of double boiler. Cook until thickened.
Serves 8 - 10

Polar Bear Pie 2

8 ounces of  cream cheese, softened
1 cup of  powdered sugar
1 cup of whipping cream, whipped
1 baked pie crust, cooled
One 11 ounce can of mandarin oranges, drained
One 21 ounce can of cherry pie filling
One 9 ounce can of pineapple chunks, drained

Beat cream cheese and sugar until smooth. Fold in whipped cream (thoroughly) and turn into pie shell. Chill 3 to 4 hours (minimum). Arrange fruit in rings around top. May substitute graham cracker crust for pie shell.
