Apple Beef Stew w/Vegetables

3 pounds of beef chuck, cut in 1 1/2 inch cubes
1/2 cup of all purpose flour
2 teaspoons of salt
1/2 teaspoon of pepper
1/4 cup of shortening or margarine
1 bay leaf
one 8 ounce can of tomato sauce
1/2 teaspoon of chili powder
2 cups of canned applesauce
2 cups of water
1 cup of diced celery
6 medium raw white potatoes, peeled and halved
6 medium onions
6 medium carrots



Toss beef cubes a few at a time in seasoned flour. Brown on all sides in hot shortening in large kettle or Dutch oven. Add next 5 ingredients. Bring to a boil, cover and simmer 1 1/2 to 2 hours. Add vegetables and simmer 1 hour longer or until tender. Makes 6 to 8servings.
