Apple Scrapple

1 pound of pork sausage meat
1 cup of yellow cornmeal
1 cup of cold water
1 cup of boiling water
1 teaspoon of salt
1 tablespoon of parsley flakes
1/2 teaspoon of dried oregano
1 cup of canned oregano
1 cup of canned applesauce
flour
bacon or salt pork fat
Sautéed apple slices, optional




In a heavy skillet, crumble sausage and cook until lightly browned. Drain off fat. Mix cornmeal with cold water. Pour into saucepan, add boiling water and seasonings. Cook, stirring, until thickened. Cover and simmer for 10 minutes longer. Then fold in applesauce and sausage. Pour into greased 9x5x3 inch loaf pan, chill until firm. Unmold and cut 1/2 " slices. Dip in flour and brown on broth sides in hot fat. Serve with apple slices. Makes 6 servings
