1/2 cup of margarine 1 1/4 cup of sugar 2 eggs 2 cups of all-purpose flour 1 teaspoon of baking soda 1/2 teaspoon of mace 1/2 cup of eggnog 1 big apple, peeled and grated 1/2 cup of chopped walnuts
Preheat oven to 350ºF. Grease 2 (8 x 4 x 2 1/2-inch) loaf pans. Cream margarine, sugar, and eggs. Add flour, baking soda, and mace alternately with eggnog. Beat for 2 minutes with an electric beater at moderate speed. Stir in grated apple and walnuts. Blend well and pour batter into prepared pans. Bake for 40-50 minutes or until done. *Keeps well when refrigerated for a few days.
