2 medium Granny Smith apples, peeled, cored & sliced Two 16 ounce cans of yams, drained 4 tablespoons of unsalted butter, melted 1/2 cup of light brown sugar, firmly packed 1/2 cup of dark corn syrup 2 tablespoons of dry sherry 1 teaspoon of cinnamon 1/8 teaspoon of salt
Preheat oven to 350ºF. Grease 10 inch round pan/dish. Process the yams in food processor with 2 tablespoons batter, sugar, corn syrup, sherry, cinnamon and salt until smooth. Spread 1/2 of mixture in dish; arrange 1/2 of apples; repeat. Brush with remaining butter; cover and refrigerate if made ahead. Bring to room temperature before baking. Bake 30 minutes uncovered. Goes great with turkey.
