| | Baked Apples w/Apple Jelly & Ginger
8 medium Golden Delicious apples, peeled and cored almost all the way through 24 thin slivers of candied ginger 3/4 cup of apple jelly
Preheat the oven to 350ºF. Arrange the apples in a glass baking dish. Place 3 slivers of ginger and 1 1/2 tablespoons of the jelly in each cored apple. Pour about 1/3" of water into the baking dish and bake in the middle of the oven for 45 to 50 minutes, basting occasionally with the pan juices, until the apples are tender when pierced. The apples can be made up to 1 day ahead and refrigerated. Rewarm before proceeding. To serve, baste the apples with pan juices. Transfer them to a platter with a slotted spatula or spoon. Makes 8 servings |
