| | Boiled Apple Dumplings
3 cups of flour 4 teaspoons of baking powder 1/2 teaspoon of salt 2 tablespoons of sugar 2 tablespoons of vegetable shortening 1/4 cup of milk 3 large tart apples 6 teaspoons of sugar milk sugar
Sift baking powder, salt, sugar, and flour into bowl. Cut in shortening until mixture is in crumbs the size of peas. Stir in 1/4 cup of milk. On floured board, roll dough to 1 1/2-inch thickness. Cut into six squares. Pare and core apples and cut in half. Place a half on each square of dough and sprinkle each with 1 teaspoon sugar. Pull the 4 corners of the dough together, dampen slightly, and press edges to seal. Tie each dumpling in a clean piece of white muslin. Drop dumplings into a large kettle of boiling water. Cook 20 to 25 minutes. Serve with milk, cinnamon, and sugar, if desired. Serves 4 to 6. |
