3 medium sweet potatoes 1/2 teaspoon of finely shredded orange peel 2 tablespoons of orange juice 1 tablespoon of brown sugar 1 tablespoon of butter or margarine 1/4 teaspoon of nutmeg, ground 1/4 teaspoon of salt 1 egg, beaten 2 tablespoons of milk 8 large cooking apples, peeled and cored 1/2 cup of corn syrup 2 tablespoons of lemon juice
Cook sweet potatoes in enough boiling salted water to cover, for 25 to 35 minutes or until tender. Drain, peel, dice, and mash with electric mixer on low speed until smooth. Add orange peel, orange juice, sugar, butter, nutmeg, and salt. Add egg and milk; set aside. Remove a slice from top of each apple. Score apple by going around the outside surface with tines of a fork in circular pattern. Using pastry bag fitted with star tip, fill apples with sweet potato mixture. Place apples in a 12x7 1/2-inch baking dish. Stir corn syrup and lemon juice together and pour over apples. Bake uncovered in 325ºF. oven for 45 minutes or until tender, basting several times with the corn syrup mixture. Serve hot. Serves 8. |
