| | Northwestern Apple Candy
4 to5 apples, unpeeled 1 cup of water 2 envelopes of unflavored gelatin 1/2 cup of cold water 2 cups of sugar 1 tablespoon of cornstarch a dash of salt 1 cup of coarsely chopped walnuts 1 teaspoon of grated lemon rind 1 tablespoon of lemon juice Confectioners' sugar
Wash the apples, without peeling or coring, cut into small pieces. Cook in water 10 minutes until tender. Put through food mill or sieve and measure 2 cups pulp into a heavy 2 quart saucepan. Cook until thick, stirring often. Soften gelatin in cold water. Mix sugar, cornstarch and salt, add to apple pulp. Cook over low heat, stirring until gelatin is dissolved and mixture is a thick puree. Remove from heat. Stir in walnuts, lemon rind and juice. Turn into an 8 inch square shallow glass dish. Refrigerate overnight. Makes 16 (2 inch) squares
