
| Simple Honest Potato Pudding

2 cups of grated raw potatoes 1 cup of thinly sliced onions 1 cup of grated carrots 1/2 teaspoon of salt 1/4 teaspoon of pepper 1/4 teaspoon of Savory or marjoram 2 tablespoons of cream 2 tablespoons of butter |

Mix together the potatoes, onions, carrots, salt and pepper. Mix and add the cream. Place in a generously buttered pudding dish. Dot with the butter. Cover and bake in a preheated 350ºF. oven for 45 minutes. Uncover and bake another 15 minutes or until a thin golden crust has formed. NOTES : During a summer I spent in Summerside, our hostess was named Dolly. She was vivacious, always neat as a pin, and a good cook to top it. She gave me this recipe.
