Cracked Pepper Steak

4 pounds of chuck steak, 2 1/2 to 3 inches thick
Instant seasoned meat tenderizer
3 tablespoons of cracked or coarsely ground black pepper

Slash fat edges of steak. Sprinkle all surfaces of the steak with meat tenderizer using about 1/2 teaspoon per pound of meat. Do not use salt. To insure penetration pierce all sides deeply at 1/2 inch intervals with a long tined fork, working tenderizer in. Press cracked pepper into both sides of steak.
Broil steak on grill about 3 inches from coals, 35 to 50 minutes, turning frequently with tongs and a turner. To serve, slice with sharp knife diagonally across the grain of the meat, at about a 30º angle - keep the slices thin. Makes 6 to 8 servings
