| Gourmet Barbecue Sauce With Honey
2 tablespoons of olive oil 1 1/2 cup of onions, finely chopped 2 tablespoons of garlic, finely chopped one 28 ounce can of tomatoes, crushed one 6 ounce can of tomato paste 1/2 cup of red wine vinegar 1/4 cup of Worcestershire sauce 1 tablespoon of chili powder 1 tablespoon of ground coriander 3 tablespoons of lemon juice 1/4 teaspoon of red pepper flakes 1 tablespoon of Tabasco sauce 2 tablespoons of fresh oregano, or 1 tbsp. dried 2 teaspoons of ground cumin 2 bay leaves

4 fresh thyme sprigs, or 1 tsp. dry 1 teaspoon of freshly ground black pepper 4 tablespoons of honey 1 teaspoon of salt
Heat the oil in a saucepan and add the onions. Cook, stirring until wilted. Add the garlic; cook briefly and add the remaining ingredients. Bring to a simmer and cook, stirring often, about 30 minutes. Let the sauce cool and use for basting. Refrigerate well. Makes 5 cups. Barbecuing & Grilling Cookbooks |
