Venison Jerky 2

3/4 cup of soy sauce
3/4 cup of Worcestershire sauce
3 teaspoons of liquid smoke
1 1/2 teaspoon of onion powder
1 1/2 teaspoon of  garlic powder
1/2 teaspoon of  pepper
2 tablespoons of  monosodium glutimate
2 drops Tabasco sauce

Slice meat into strips with the grain (flank works best). Make the marinade and put the meat in a container like Tupperware that you can turn every 1/2 hour for about 6 hours. Place each strip on the oven racks, heating for about 6 hours at low over temperature. Store in covered container. Or use a Dehydrator & follow manufactures instructions.

Venison Jerky

20 lbs. stripped venison
1 small bottle of  Tabasco sauce
Four 5 ounce bottles of  Worcestershire sauce
Two 6 ounce bottles of  soy sauce
1 box red pepper
1 small bottle onion salt
1 bottle liquid hickory smoke (omit if using smoker)

Mix all ingredients and pour over venison as a marinade. Allow to stand overnight. Place venison strips on cookie sheet or foil in a 175ºF. oven. Bake for approximately 2 hours, or until dry. Be sure to leave door of oven open a crack. Prep. time: 12 hours. Serves several. Or use a Dehydrator & follow manufactures instructions.
