Low Cholesterol Black Eyed Pea Casserole w/Ham & Carrots

4 cups of cooked or two 1 pound cans of black eyed peas, drained and rinsed
1 teaspoon of dried sage
one 8 ounce can of no salt added tomato sauce
1/2 teaspoon of garlic powder
4 carrots, peeled and grated
8 ounces of lean smoked ham or homemade turkey sausage, diced
2 tablespoons of olive oil
pepper



Preheat oven to 350ºF. Combine all ingredients in a mixing bowl, then transfer to a 9 by 13 inch baking pan. Cover and bake for 30 minutes. Makes 4- 6 servings
