
| Bayou Chicken Bake

4 -6 Perdue Chicken Breasts 1 1/2 - 2 teaspoons of Cajun or Creole seasoning 1/2 cup of chopped onion 1 cup of uncooked regular long-grain rice one 16 ounce package of frozen black-eyed peas two 14 1/2 ounce cans of Cajun-style tomatoes 2 tablespoons of chopped fresh parsley |

Preheat oven to 350ºF. Lightly grease 13x9 inch baking dish. Sprinkle chicken with Cajun seasoning; place in baking dish. In large bowl, combine onion, rice, black-eyed peas and tomatoes. Pour over chicken. Cover and bake 45 minutes. Uncover and bake 15 minutes longer, or until chicken is cooked through. Sprinkle with parsley before serving. Makes 4 to 6 servings.
