Southern Black eyed Peas
4 cups of black-eyed peas; (if dried peas are used, soak overnight or at least for 6 hours in cold water 2 quarts of water 1/4 teaspoon of salt 2 ounces of lean ham; cubed or Canadian bacon Place the peas in large pot containing 2 quarts of water. Add salt and lean ham. Cook approximately 1 hour or until peas are tender. Additional water may be added during cooking. |
