1 cup of dried black eyed peas 1 small onion, chopped fine 1/2 teaspoon of cayenne 1/2 cup of chopped fat free ham 1 bay leaf 1 cup of long grain rice
In a medium saucepan simmer black eyed peas, onion, cayenne, ham, bay leaf and water to cover ( about 3 cups) for 45 minutes or until black eyed peas are soft. Add rice, cover and simmer for 15 minutes or until rice is soft and has absorbed liquid. Remove bay leaf and serve. Makes 6 servings
