Southern Hopping John

1 pound of black eyed peas 2 quarts of boiling water 1 onion, chopped 1 pound of lean salt pork or bacon, diced salt and pepper to taste Crushed red peppers 1 cup of raw rice, cooked separately |

Wash the black eyed peas, soak overnight in cold water or boil them for 2 minutes, and soak 1 hour or longer ( or use quick cooking variety). drain well. Put the peas in a large pot, add the boiling water, onion salt pork, or bacon and seasoning. Simmer, covered for about 2 hours or until peas are very soft, adding water as needed. Taste, and correct the seasonings. Cook the rice until dry and fluffy. Add the cooked rice to the cooked peas in the pot. Simmer gently until all liquid is absorbed. Serves 8 - 10

2 cups of black-eyed peas or beans
3 quarts of water
1/2 pound of sliced bacon
1 onion, minced
2 cups of raw rice
1 tablespoon of salt
1/4 teaspoon of pepper
1 hot red pepper
Bring peas and water to a boil. Boil for 2 minutes. Cover pan and let stand
for 1 hour. Cut up bacon and cook until brown; add onions and cook until
golden. Pour bacon mixture into peas. cover and simmer until peas are
tender, about 1 hour. Stir in rice and seasonings. Cook, covered, without
stirring until rice is tender. Makes 8 to 10 servings
