Apple Cheddar Canapés

7-9 slices rye bread
1 large Granny Smith apple, peeled, cored & coarsely grated
1 cup of coarsely grated extra sharp cheddar cheese
3 tablespoons of mayonnaise
1 tablespoon of honey
1 teaspoon of Dijon mustard
1/4 teaspoon of caraway seeds
Freshly ground pepper to taste




Cut out 3 or 4 rounds from each slice of bread using a 2" round cutter. On a baking sheet toast the rounds under a preheated broiler, turning once until golden. In a bowl, combine the apple, cheddar cheese, mayonnaise, honey, mustard, caraway seeds and pepper. Spread each toast with a scant teaspoon and broil for approximately 2 minutes. Makes approximately 28 pieces, serving 6 to 8 people.
