Cheese Canapés

20 white bread rounds
2 stiff beaten egg whites
1 1/4 cup of grated Swiss cheese
1/3 cup of finely chopped green pepper
1 teaspoon of chopped parsley
1/2 teaspoon of salt
Dash of pepper
3 slices of chopped raw bacon

Into stiffly beaten egg whites fold all by hand. Spoon on bread. Sprinkle bacon on top. Broil 5 minutes until bacon browns and cheese melts. 

Cheese Canapés 2

2 sticks of margarine, at room temperature
1 1/2 pounds of Cracker Barrel cheese
2 cups of plain flour
1/2 teaspoons of salt
2 cups of Rice Krispies

Grate cheese and mix with margarine. Add flour and salt. Add Rice Krispies. Shape into small balls. Put on cookie sheet and mash with fork. Bake at 325ºF. for 20 to 25 minutes. Yield 8 dozen. 


Cheese & Bacon Canapés 3

1/2 pound of extra sharp Cheddar 
1/2 pound of uncooked bacon
1 small onion, quartered
One 12 ounce package of Ritz crackers
Paprika

Put cheese, bacon and onion through grinder. Mix well. Refrigerate for a few hours. Spread a full teaspoon on each cracker. Sprinkle with paprika. Broil until bacon is cooked and cheese is brown. Makes about 50. 

Cheese Canapés 4

Two 8 ounce  cream cheese
6 tablespoons of  mayonnaise (1/3 c. + 1 tbsp.)
5 green onions, finely chopped
5 drops of hot pepper sauce (Tabasco)
1 cup of  parmesan cheese
1 loaf honey white bread 

Mix cheese and ingredients by hand. Cut bread with jigger size glass, 4 rounds per slice. Butter 1 side of bread and brown lightly under broiler. Put 1 teaspoon cheese mixture on unbuttered side. Place under broiler and brown lightly for 3 to 5 minutes. Place on warming tray to keep warm. Makes about 70 rounds. To make ahead of time, after mixture is put on rounds, freeze on cookie sheet. Once frozen put in freezer bags and keep frozen until ready to use.
