Onion Canapés
1 cup of margarine 1 cup of grated Parmesan cheese 1/2 cup of finely chopped onion 1 tablespoon of milk 1 loaf sliced rye cocktail bread
Mix the first 4 ingredients. Spread mixture over lightly toasted bread. Broil 4 inches from heat for 2 or 3 minutes or until golden and bubbly. Serve hot. Makes 36. |

Curried Onion Canapés
1 pound of Spanish onion, chopped fine 1/4 cup of mayonnaise 1 egg yolk 1 teaspoon of salt 1 teaspoon of curry powder 1/2 teaspoon of sugar 1 loaf (8 oz.) party rye bread 1 large can of grated Parmesan cheese Butter
Put chopped onions in mixing bowl. Blend mayonnaise with egg yolk, salt, curry and sugar. Mix into onions. Spread buttered rye bread with onion mixture using about a tablespoon for each. Sprinkle generously with Parmesan and bake at 350ºF. for 15-20 minutes. Green Onion Canapés
1/2 pound of bacon 1 bunch green onions, chopped 1/4 c. + 2 tbsp. mayonnaise 1/4 c. grated Parmesan cheese Dash of pepper 1 1/2 dozen Melba Cracker Rounds
Place half of bacon on a microwave roasting rack set inside of 12"x8"x2" baking dish. Cover with paper towels; microwave at HIGH for 5 to 6 minutes or until done. Drain; crumble bacon and set aside. Repeat with remaining bacon. Combine bacon and next 4 ingredients; stir well. Spread about 1 teaspoon mixture on each cracker around outer edge of paper towel lined plate. Microwave at HIGH for 1 minute or until hot. Repeat with remaining crackers. Yield: 1 1/2 dozen appetizer servings. Hot Onion & Cheese Canapés
1 can Durkee's French fried onion rings 2/3 cup of mayonnaise 1/3 cup of Parmesan cheese 1 package of Pepperidge Farm party rye
Crush onion rings in blender. Mix with mayonnaise and Parmesan. Spread on party rye and broil until bubbly. May be prepared ahead and frozen until needed. No need to thaw before broiling. |
