| | Clam & Bacon Bundles
2 slices of bacon, cut up 3/4 cup of finely chopped broccoli (4 to 5 ounces) 1 medium carrot, shredded (1/2 cup) 1 small yellow summer squash, chopped ( 1 cup) two 6 1/2 ounce cans of chopped clams, drained 1/3 cup of soft style cream cheese with chives and onion 2 tablespoons of creamy cucumber salad dressing one 10 ounce package of refrigerated pizza dough 1 tablespoon of milk 1 tablespoon of sesame seed
In a large skillet cook bacon till crisp. Remove bacon, reserving 1 tablespoon of drippings in skillet. Drain bacon on paper towels. For filling, cook broccoli and carrot in reserved drippings for 2 minutes. Add squash, cook for 1 minute more. Remove from heat. Stir in clams, cream cheese, salad dressing, and bacon. On a lightly floured surface, roll pizza dough into a 12 inch square. Cut dough into four 6 inch squares. Place 1/2 cup of the filling on one corner of each square. Moisten edges and fold opposite corner over filling. Press edges with tines of fork to seal. Brush bundles with milk. Sprinkle with sesame seed. Place on a greased baking sheet. Bake in a 400ºF. oven about 20 minutes or till golden. Cook on a wire rack for 5 minutes. Serve warm. Makes 4 servings |
