20 thin slices of fresh bread 1 medium onion 3 tablespoons of butter or margarine 1/4 cup of flour two 6.5 ounce cans of clams, undrained 2 cloves garlic, crushed 2 teaspoons of lemon juice 2 teaspoons of minced fresh parsley 1/2 teaspoon of freshly ground black pepper melted butter
Trim crusts from bread and flatten with a rolling pin. In a medium saucepan, sauté onion in butter until tender, stir in flour to thicken. Add clams and broth, garlic, lemon juice, parsley and pepper. Cook until mixture thickens, stirring occasionally, you may have to add a little more flour. Spoon a strip of clam filling 1/3 cup from the end of each slice of flattened bread. Bring short end of bread over filling and roll. Cut each roll into 4 pieces. Place each piece, cut side down, on a greased baking sheet and brush with melted butter. Bake at 375ºF. about 12 minutes or until lightly browned. Makes about 80 pinwheels
7-26-2009 Hey Just wanted to say I tested this recipe last night for dinner, with plans to make it for our guests on Saturday night. There was a bit of liquid in the saucepan. took a bit to absorb even after adding additional flour, Next time I will half the liquid, other than that it was great. I can't wait for Saturday!
