Crab Soufflé 

1 1/2 cups of milk, scaled
1 cup of soft bread crumbs
1/4 cup of butter, melted1/2 cup of grated cheese
1 cup of fresh crab meat
1 tablespoon of minced onion
2 tablespoons of minced green pepper
1 tablespoon of minced pimento
4 eggs, separated



Combine the milk, bread crumbs, butter, cheese, crab meat, onion, green pepper and pimento and mix well. Beat the egg yolks and stir into the crab mixture, then fold in the stiffly beaten egg whites. Turn into a deep baking dish. Bake at 350ºF  for 1 hour. Makes 4 - 6 servings
