| | Crab Meat Newburg Appetizer
2 tablespoons of butter or margarine 2 tablespoons of flour 1/2 teaspoon of salt 2 cups of milk 2 cups (8 ounces) of shredded Cheddar cheese 2 cans (7 1/2 ounces each) of Alaska King crab, drained and flaked 3 hard cooked eggs, grated 1/2 cup of finely chopped onion A dash of ground red pepper 1 tablespoon of snipped parsley
Melt butter in a saucepan. Add flour and salt. Gradually add milk, stirring, until thickened and smooth.
Add cheese, stirring until blended. Blend in remaining ingredients, except parsley. Put into a 1 1/2 quart casserole.
Bake, covered at 325ºF. for 15 minutes or until heated through. Sprinkle with parsley. Serve with Melba toast or toast points. 25 servings |
