Maryland Crab Cakes 2

1 pound of crabmeat, preferably backfin
1/2 cup of mayonnaise or salad dressing
3 tablespoons of chopped green pepper
1 tablespoon of chopped onion
2 tablespoons of chopped pimiento
2 eggs
2 teaspoons of Worcestershire sauce1 teaspoon of dry mustard
salt and pepper to taste
dry cracker or bread crumbs
cooking oil



In a bowl, combine the crab, mayonnaise, green pepper, onion, pimiento, eggs, Worcestershire sauce,  mustard, salt & pepper. Shape into small patties and roll in crumbs. Fry in a lightly oiled skillet, just a few minutes on each side, until lightly browned. Garnish, if desired, with fresh parsley and lemon juice. Makes 4 servings
