Swiss Crab Casserole

1 can of crab
1 1/3 cup of Swiss cheese, save 1/3 for the top
2 medium zucchini
2 cloves garlic
1 medium onion
3 tomatoes
1 stick of butter, save 1/3
1 cup of seasoned bread crumbs
salt
pepper
paprika
1 teaspoon of dried basil




Sauté onion and zucchini in butter 12 - 15 minutes. Stir occasionally and salt to taste. Cut tomatoes in thick slices or wedges and cut cheese into strips. Set aside. In a separate skillet melt remaining 1/3 stick of butter and add crushed garlic and crab. Sauté briefly. Fold crab into squash. Add cheese and tomatoes, basil and crumbs, pepper and salt. Place in casserole. Cover top of mixture with remaining cheese, crumbs and paprika. Bake at 375ºF. for 30 to 40 minutes.
Garnish: with watercress. Serve: with crusty French bread and a dry white wine
