Banana Cranberry Muffins

Banana Cranberry Muffins

1 1/2 cups of flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1/2 teaspoon of salt
1/2 teaspoon of cinnamon
1/8 teaspoon of cream of  tartar
1/2 cup of sugar twin
1 Egg - Second Nature
1 1/2 cups of mashed bananas
1/3 cup of margarine - Becel Light
3/4 cup of cranberries; fresh or frozen


From: gordonk@nbnet.nb.ca (gordonk) Date: Tue, 16 Jul 1996 10:04:19 -0300 Recipe By: Sugar Twin Preheat oven to 375ºF.  Combine first 7 ingredients in large bowl. Beat egg, banana and melted margarine together well. Add to dry ingredients, stirring just to moisten. Fold in cranberries. Spoon into 12 medium muffin cups, lightly greased or lined with paper baking cups. Bake for 20 - 25 minutes, or until top springs back when lightly touched.  Serving Size: 12
