| | Summer Cranberry Relish
1 pound package of fresh cranberries 1 cup of sugar juice of 1 orange 1 teaspoon of grated orange peel 1 cup of water 1 bunch of fresh mint, chopped
Chop the cranberries coarsely with a knife or in a food processor. Combine with remaining ingredients in a saucepan and bring to a boil, stirring occasionally. Reduce heat and simmer for 5 - 10 minutes or until mixture thickens. Chill before serving. Makes 20 servings or 3 cups |
