| | Kentucky Chicken and Dumplings
one 4 pound chicken with giblets 1 quart of water 4 cups of sifted flour 2 teaspoons of baking powder 1 teaspoon of soda 1 teaspoon of salt 1/2 cup of shortening 2 cups of buttermilk
Cook the chicken and giblets in boiling salted water for 1 hour and 30 minutes or until tender. Drain and reserve the giblets and broth. Place the chicken on baking pan. Bake at 400ºF. until brown. Sift the flour, baking powder, soda and salt together in a bowl, then make a well in the flour mixture.
Add the shortening and buttermilk and mix well, then knead 28 times. Roll out dough thin on floured board and cut into 2x5 inch strips. Bring the giblets and reserved broth to a rapid boil, then drop the dumplings in the boiling broth. Cover and cook for 18 minutes. Serve with the chicken. Makes 6 - 8 dumplings |
