Potato Dumplings

2 to 3 cups of mashed potatoes
1 egg
1/2 cup of sifted all purpose flour
1/2 teaspoon of salt
1/4 teaspoon of pepper
1/8 teaspoon of powdered nutmeg
24 fried or sautéed croutons

Beat potatoes and egg together smoothly. Beat in flour and seasonings. Chill mixture about 30 minutes. Divide into 12 portions or 24 very small portions. Wrap larger portions around 2 croutons. If smaller dumplings are made, enclose 1 crouton in each.
Drop dumplings on gently boiling thickened stew or sauerbraten. Cook uncovered 15 minutes. Turn dumplings frequently with spoon, basting with gravy in stew or sauerbraten. Makes 12 - 24 dumplings
