2 1/4 cups of flour 1 teaspoon of salt 1 egg, well beaten 1/4 - 2/3 cup of water 3 tablespoons of butter or margarine 4 tablespoons of dry bread crumbs or 2 tablespoons of poppy seeds
Sift flour and salt into bowl. Make a well in center and pour in beaten egg. Using wooden spoon, stir in egg, gradually incorporating outside ingredients. At same time, gradually begin adding water until batter is stiff but smooth. Spread dough flat on plate or floured board. With sharp knife scrape off small pieces of dough and drop into salted boiling water. Cook small batch at a time. The dough will sink and then rise to surface as it cooks. Once they have risen, boil gently for 5 to 8 minutes until dough is completely cooked through center. Remove from water with slotted spoon and drain. Repeat until all dough is used. If desired, melt butter in large fry pan and add bread crumbs. Cook until golden brown and crisp and toss with hot spaetzle. Alternatively, pour melted butter over spaetzle and toss with poppy seeds.
