5 eggs 2 cups of flour 1/2 teaspoon of salt 1/4-1/2 cup of water
Put all ingredients together. Beat by hand until batter bubbles. Bring a large pot of water to boil, squeeze batter into boiling water, when it rises to top they are done (need Spaetzle machine) or can cut by hand on wooden board. |

Spaetzle
3 eggs 2/3 cup of milk 2 cups of flour 1/4 teaspoon of salt 1/8 teaspoon of nutmeg 3 tablespoons of butter, melted
Bring a large pot of water to boil (about 6 to 8 cups). In bowl, beat the eggs with the milk. Mix the flour with the salt and nutmeg. Beat the liquid mixture into the flour. Makes very wet dough. Spoon a large portion onto a plate. Hold plate over simmering water. Scrape off bits of dough with knife tip into water. Make pieces 1 x 1/8 inch. Work quickly. When spaetzle rise, skim with slotted spoon and put into warm bowl with melted butter. Toss lightly before serving. |
