5 eggs 2 cups of flour 1/2 teaspoon of salt 1/4-1/2 cup of water
Put all ingredients together. Beat by hand until batter bubbles. Bring a large pot of water to boil, squeeze batter into boiling water, when it rises to top they are done (need Spaetzle machine) or can cut by hand on wooden board.
Spaetzle
3 eggs 2/3 cup of milk 2 cups of flour 1/4 teaspoon of salt 1/8 teaspoon of nutmeg 3 tablespoons of butter, melted
Bring a large pot of water to boil (about 6 to 8 cups). In bowl, beat the eggs with the milk. Mix the flour with the salt and nutmeg. Beat the liquid mixture into the flour. Makes very wet dough. Spoon a large portion onto a plate. Hold plate over simmering water. Scrape off bits of dough with knife tip into water. Make pieces 1 x 1/8 inch. Work quickly. When spaetzle rise, skim with slotted spoon and put into warm bowl with melted butter. Toss lightly before serving.
