| | Steak with Butter Crumb Dumplings
2 pounds of round steak 1/3 cup of flour 1/4 cup of shortening 1 can of cream of chicken soup 1 soup can of water 1/2 teaspoon of salt 18 teaspoon of pepper
Cut the steak in 6 portions and dredge with flour. Brown steak lightly in shortening in a large skillet, then place in a 2 quart baking dish. Mix the soup, water, salt and pepper in the same skillet and bring to a boil. Pour over the steak. Bake at 350 for 30 minutes or until steak is tender. Remove from oven and increase temperature for 425ºF.
Butter Crumb Dumplings
1 cup of fine dry bread crumbs 1/2 cup of melted butter 2 cups of flour 3 teaspoons of baking powder 1 teaspoon of poultry seasoning 1/2 teaspoon of salt 1 cup of milk
Mix the bread crumbs and 1/4 cup of butter. Combine the flour, baking powder, poultry seasoning and salt in a bowl. Pour in milk and remaining butter and stir until dry ingredients are moistened. Drop by rounded spoonfuls into buttered crumbs and roll until coated. Place on top of steak mixture and bake for 20 to 30 minutes longer. 6 servings |
