Cheesy Coconut Easter Eggs

 

Cheesy Coconut Easter Eggs

1 three ounce package of cream cheese, softened
1/2 teaspoon of vanilla
1 pound of confectioners sugar
1/4 cup of flaked coconut
a dash of salt
1 pound of chocolate flavored or pastel compound coating, melted

Combine cream cheese and vanilla in bowl. Gradually add confectioners sugar, coconut and salt. Mix to consistency that can be easily handled, adding more confectioners sugar if necessary. Form candy into eggs; let set approximately 1 hour. Dip into compound coating; let set until firm. Servings: 1
