Good Friday Casserole


 

Good Friday Casserole
 
 1 small onion, chopped
 1/4 cup of margarine
 1/4 cup of flour
 2 cups of milk
 1/3 cup of mayonnaise
 2 tablespoons of prepared mustard
 Salt & pepper
 one 10 ounce package of frozen cauliflower, thawed and cut up
 one 6 ounce can of tuna, undrained
 1/4 pound of egg noodles, cooked
 1/2 cup of red pepper, chopped
 1/2 cup of green pepper, chopped
 Bread crumbs

In small saucepan, sauté onion in butter until tender. With a whisk, blend in flour. Gradually stir in milk and cook until sauce thickens, stirring constantly. Remove form heat and blend in mayonnaise, mustard, salt and pepper. In a greased 2 quart glass casserole dish, combine the sauce, cauliflower, tuna noodles and peppers. Sprinkle with bread crumbs on top. Bake at 350ºF.  for 35 minutes.
