Good Friday Potato Cakes

 

Good Friday Potato Cakes
 
 4-6 large potatoes
 1 large onion
 1 cup of  flour, approx.
 Salt & pepper
 Vegetable oil

Grate onion and potatoes. (Grate onion first to keep potatoes from darkening.) Add salt and pepper to taste. Add flour to make a heavy batter. Put 1" oil into an electric fry pan set on highest temperature. Spoon batter into oil, spreading batter out into a pancake shape. Fry on both sides until golden brown and crisp. NOTE: No eggs or milk are used.
