Carrot, Sweet Potato and Apple Kugel


 

Carrot, Sweet Potato and Apple Kugel
 
 1/2 cup of margarine, melted
 1 cup of Sweet Potato, peeled & grated
 1 cup of carrot, peeled & grated
 1 cup of apple (Tart), peeled & grated 
 1/2 cup of Matzo Meal
 2 tablespoons of Sweet Wine
 1/2 teaspoon of cinnamon
 1/2 cup of white Sugar, can be reduced a bit 
 1/2 cup Brown Sugar, can be reduced a bit 

Source: The Complete Passover Cookbook  Use some of the melted margarine to lightly grease a 7 X 11 inch baking pan. Combine the remainder of the margarine with the other ingredients. Mix well. Pour into pan. Bake at 375ºF.   for 45 minutes or until brown. Variation: Add 1/2 cup chopped pitted prunes and 1/2 cup raisins. Can be used as a dessert or side dish.
