| Flavored Brine
2 cups of water 2 tablespoons of sliced peeled ginger 1 tablespoon of freshly ground white pepper 1 teaspoon of red pepper flakes 1 1/2 cups of coarse salt
Combine water, ginger, pepper, & pepper flakes in medium saucepan & bring to a boil. Gradually stir in salt. reduce heat & simmer 10 minutes. Strain through sieve lined with dampened towel. Store in tightly covered jar. Makes 1 1/2 cups |
