Celery Fritters

5 celery stalks with leaves
1 cup of flour
2 beaten eggs
Salt, pepper and oregano
1 clove garlic, minced
1/4 cup of water
1/4 cup of grated Parmesan cheese
1 cup of oil

Wash and chop celery into 1/2 inch pieces. Add flour, eggs, salt, pepper, oregano, garlic, water and cheese and mix well. It will have the consistency of pancake batter. Heat oil in skillet or deep fryer (use more oil). Once hot, drop batter by teaspoonfuls into hot oil and fry until golden brown. Drain on paper towels and serve hot. *Zucchini, unpeeled and chopped, may be substituted for the celery.
