Chicken Fritters 1

1 1/3 cup of sifted flour
1/2 teaspoon of baking powder
1 teaspoon of salt
2 eggs, beaten
2/3 cup of milk
1 tablespoon of salad oil
4 large chicken breast

Cut chicken off bone and cut into pieces about 1 inch square. Set aside. Mix together dry ingredients and liquids in separate bowls. Roll chicken in liquid, then in dry ingredients. Deep fry in hot oil until puffy and golden, about 6 to 10 minutes, turning once. Drain on paper towels. Serve at once. Makes 4 servings.

Chicken Fritters 2

1 1/2 cups of flour
3 tablespoons of baking powder
3/4 teaspoon of salt
1 egg, beaten
1 cup of milk
One 15 ounce can of boned chicken or 1/2 cup of chopped cooked chicken or turkey
1/4 cup of finely chopped onion
Oil for deep frying
Pimiento Cheese sauce

In a bowl, combine the flour, baking powder, and salt. Combine the egg, milk, chicken, and chopped onion, add to dry ingredients and mix just till moistened. Drop batter by tablespoonfuls into oil heated to 365ºF. fry, a few at a time, until they turn golden brown, 3 to 4 minutes, turning once. Drain fritters on paper towels. Serve hot fritters with Pimiento Cheese sauce. Makes 24 fritters
