Pineapple Fritters 2

1 1/2 cups of flour
1/2 teaspoon of salt
2/3 cup of beer
Lukewarm water, as needed
1 tablespoon of butter, melted
1 egg white, stiffly beaten
Two 1 pound cans of pineapple slices, drained
Oil for frying
Confectioners' Sugar, to sprinkle 

To make batter, sift flour and salt together into a large bowl. Stir in beer until smooth, do not beat. Add only enough lukewarm water to make a thick batter. Stir in the butter, fold in the egg white. Place the pineapple on paper towels, pat dry. Dip the pineapple slices, one at a time, into the batter, shake off the excess batter. Heat the oil to 375ºF. in a deep skillet, fry the pineapple fritters until golden brown on all sides. Drain on paper towels. Place the fritters on a platter, sprinkle with confectioners' sugar. Serves 8
