Southern Corn Fritters

1 can of corn, drained
2 1/2 cups of prepared biscuit mix
1/2 teaspoon of salt
2 tablespoons of self rising corn meal (if using plain, add 2 tsp. baking powder)
1 tablespoon of melted butter or oil
1 egg
1 cup of milk

Mix the dry ingredients and add to the melted butter and corn. Mix well. Beat egg and add to liquid. Add egg and liquid gradually to dry ingredients. Mix well. Drop by spoonfuls in deep fat. Once brown, serve with molasses and butter.
